Digital Twin For Monitoring and Operational Optimization For A Bakery Industry

Increasingly, industrial control systems (ICS), integrated sets of hardware, software, and networks, automate, monitor, and manage industrial processes in real time in small and medium-sized enterprises (SMEs). This paper de-scribes the methodology and solution for automating and monitoring the op-eration of a bakery plant. The purpose of this work is the comprehensive control of the entire system for processing, cooking, and baking various types of bread during the manufacturing process. As control system device is used a Programmable Logic Controller (PLC), along with its inputs and out-puts. The designed control system, not only manages all the plant's elements, but also monitors their correct functioning by means a digital twin to simulate the automated bakery system, allowing for verification of the product's pro-duction chain. Its development enables complete control and real-time in-formation on the entire process. The proposed solution, not only increases the reliability and safety of the process compared to other plants or types of operations, but also reduces costs by improving process efficiency, product processing speed, and minimizing maintenance and monitoring costs.
